Raw Date and Chocolate Soy Butter Granola Bar
3 C pitted dates, minced (can pulse in food processor)
1 C Don’t Go Nuts Chocolate soy butter
2 packages gluten-free instant oatmeal
3/4 C chopped soynuts (roasted soybeans)
1. In a large bowl, mix dates and soy butter until incorporated. Add oats and continue to mix. Fold in soynuts until fully combined.
2. Transfer mix into a parchment- or foil-lined 8×8 glass baking pan. Press down until evenly spread. Cover tightly with plastic.
3. Place covered pan into freezer for 30 minutes. Cut into bar portions and store flat in the refrigerator (or wrapped in plastic and stored in the freezer).
Makes 10 servings.
